This is a sort of pastiche of a variety of Sephardic haroset recipes. Medjooli dates are exceedingly moist – buy a few extra to snack on while cooking!
Makes 2 cups
10 pitted medjooli dates
1 large banana
1/2 cup golden raisins (OK to substitute regular raisins)
1/2 cup walnut halves, toasted
1/2 cup unsalted, shelled pistachio nuts, toasted, plus more for garnish
1/4 cup unsweetened shredded dried coconut, plus more for garnish
1/3 cup sweet red wine, such as Manischewitz Malaga
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves.
Place banana, dates, raisins and wine in food processor and process until smooth, about 20 seconds. Add walnuts, pistachios, coconut and all spices and pricess until smooth, another 15 to 20 seconds. Transfer to a bowl and garnish with coconut and chopped pistachios.
