Chocolate Wafer Cookies
(Makes about 40 cookies)

Start to finish: 60 minutes

These cookies may be a little fussy, but the result—chocolatey, crisp and almost razor-thin—is worthwhile.
1/2 cup matza cake meal
1/2 cup potato starch
2 tablespoons cocoa
1/4 teaspoon salt
3 oz. bittersweet chocolate, chopped
1/2 stick (4 tablespoons) margarine
1-cup sugar
1 egg, lightly beaten
1-teaspoon vanilla
Preheat oven to 350°F. Line 2 cookie sheets with parchment paper and reserve. Sift together cake meal, potato starch, cocoa and reserve. Combine chocolate and margarine in a microwave-proof bowl and microwave over high heat until chocolate is melted, about 2 minutes. Remove from microwave and stir until smooth. Add dry ingredients and sugar mix until just combined. Add egg and vanilla and mix until combined; mixture should form firm dough. Place in refrigerator to chill for 15 minutes. Using lightly oiled hands, roll dough one teaspoon at a time and place, 4 inches apart, on lined cookie sheets. Using the palm of your hand, flatten dough into very thin discs, about 3 inches in diameter. Bake for 13 minutes. Remove from oven and let cool on parchment until hard, then remove to racks and cool completely.
